Kevin Curry, the Dallas-based entrepreneur, cookbook author and creator behind Fit Men Cook, has been even busier lately. In addition to sustaining his million-plus following on Instagram, he’s recently partnered with meal kit brand Home Chef.

In a recent episode of our Eat Drink D-FW podcast, Curry offered some health cooking tips as well as his favorite Dallas food finds.

On his mission for Fit Men Cook:

When he launched Fit Men Cook in 2012, Curry says he was at a low point in his life. “I was just medicating with food and alcohol,” he says. “When I made that decision to turn my life around, it all started in the kitchen.” So he wants to pass on what he learns to others, and “help people live healthier and happier life through food.”

His key approaches to cooking and eating healthfully:

“I’m not an absolutist,” Curry says. “Do what you can where you are.” He says you don’t have to do a complete overhaul overnight. Do what’s practical for your budget, your time, and your skills in the kitchen.

He often eats the same thing over and over again. When he’s shopping, he looks for at least two greens per week (lately he’s liking chard and spinach), plus either brown rice or jasmine rice or other grains, and some proteins. “Not every meal has to have an animal protein,” he says. He mixes in beans like chickpeas and black beans often. He also eats “a bunch of fruit.” “It’s so hydrating and refreshing.”

How he balances all his projects:

In addition to cookbooks, spices, cookware and more, Curry now has a partnership with Home Chef. He says their philosophies are aligned because it’s about making healthful food accessible. “I wanted to get inside people’s kitchens in a brand new way,” he says. A couple of meals in the plan include some “fan favorites” like a stuffed chicken parm and an “eggroll in a bowl.”

“I think there’s a lot of value to cooking your food,” he says, so he likes that the plan offers multiple options like food that’s already prepared but also meals where you actually have to cook it. “It’s actually in the name, Fit Men Cook, so we gotta do some work.”

Dallas foodie finds:

Curry recently moved from downtown Dallas to the Bishop Arts District. He goes to the grocery store five times a week, which he says he knows not everyone wants to do. “It’s my joy,” he says. Here’s where he shops and eats:

* Fiesta Mart: Fresh produce and fresh juice. “Plus they got the music going - it’s a whole vibe!” fiestamart.com.

* Cox Farms: Fresh produce. 778 Fort Worth Ave., Dallas. coxfarmsmarket.com.
